Christmas Chutney Recipe

900g Tomatoes
3 red peppers
1 large aubergine
1 green pepper
200g onions - finely chopped
4 fat garlic cloves
350g granulated sugar
300ml/half pint white wine vinegar
1 tbsp salt
1 tbsp coriander seeds
1 tbsp paprika
2 tsp cayenne pepper

Boil for 2 hours 30 minutes, until soft, skins removed
